Cornish Hens with Orange Rice
- 2 1 1/2 pound Cornish Hens
- 1/2 cup butter, melted
- 3 Tbsp cornstarch
- 1 (10 oz) jar apple jelly
- 1 2/3 up Sauterne
- 1 cup orange juice
- 1/2 tsp. salt
- Orange Rice (recipe following)
Brown Cornish hens all over in butter in a large deep skillet over medium-high heat; remove Cornish hens, and place in a greased roasting pan. Add cornstarch to drippings in skillet, blending well. Add apple jelly and next 3 ingredients, stirring with a wire whisk until combined. Cook 2 minutes, stirring constantly, or until smooth and thickened.
Pour 1/2 cup sauce over Cornish hens in roasting pan; bake, uncovered, at 350 degrees for 1 hour and 10 minutes; basting often.
Arrange Cornish hens and Orange Rice on a serving platter; garnish with fresh parsley or thyme, if desired. Serve remaining sauce with hens.
