Chocolate-Macadamia Nut Pie
Makes 1 (9-inch) pie

- 1 (6-oz) package semisweet chocolate morsels
- 1 (9-oz) package chocolate wafers, finely crushed
- 1/3 cup butter, melted
- 1/2 (8-oz) package cream cheese, softened
- 1/2 cup sugar
- 1 1/2 teas. vanilla extract
- 1 (3 1/2 oz) jar macadamia nuts, coarsely chopped
- 1 pint whipping cream
Place chocolate morsels in a microwave-safe bowl; microwave at HIGH for 1 1/2 minutes; or until chocolate melts, stirring often. Set aside.
Combine crushed chocolate wafers and melted butter. Firmly press mixture onto bottom and 1 inch up sides of a lightly greased 9-inch springform pan or pie plate.
Combine melted chocolate, cream cheese, sugar and vanilla in a bowl; beat at medium speed with an electric mixer 2 minutes or until smooth. Stir in nuts.
Beat whipping cream at high speed with an electric mixer until soft peaks form. Add one-fourth of whipped cream to chocolate mixture, and beat until blended. Fold remaining whipped cream into chocolate mixture. Pour mixture evenly into crust. Cover and freeze 4 hours or until firm. Carefully remove sides of pan (if using a springform pan); and let pie stand 10 minutes before serving.
